Easy mini fairy cakes
These little cupcakes are the ideal things to bake if you’re stuck for time but still want to make something that looks really pretty.
It’s so simple that you can even involve the youngest in the family or those with very little baking experience.
You will need a mini cupcake tray though. If you don’t have one, then you can just bake it in an ordinary cupcake tray.
Maybe something to make for Mother’s Day?
This batch makes about 24-30 mini fairy cakes (or 12 smaller ordinary fairy cakes)
125 grams of soft butter
125 grams of caster sugar
2 large eggs
125 grams of self raising flour
1/2 teaspoon of vanilla paste or extract
Icing sugar, water and food colouring for the icing
Edible flowers or sprinkles (optional)
So firstly you need a mini cupcake tray and line it with mini cupcake cases (these can be found in shops that sell baking equipment/ accessories or online.
Or you can just use an ordinary cupcake tray. If you do then try to use smaller cupcake cases if you can find them.
Turn the oven on 180 degrees /160 fan.
Just mix the butter and sugar together until soft and creamy. Add one egg at a time. Then fold in the flour and vanilla using a rubber spatula.
I find that the easiest way to put the batter in the cupcake cases is to fill a piping bag with the batter and then pipe it into the cases. But you can of course just use a spoon as well.
Only fill about 1/2- 3/4 of the cases as the cupcakes will rise a lot in the oven.
For mini ones: bake for about 8-10 minutes in the middle of the oven.
For bigger ones: bake for about 15-18 min.
Leave to cool on a cooling wrack or a tray.
For the icing:
Mix icing sugar and a little bit of water in a bowl until you have a thick paste. Add food colouring if you wish. When I made mine, I added yellows to half of the icing and pink to the other half.
Spoon the icing onto the cupcakes and add some sprinkles or edible flowers (optional).
Enjoy with a cup of tea or coffee. These make a lovely little gift for any occasion.
You can of course ice your cupcakes with a buttercream or cream cheese icing if you wish, but this requires a little more time and effort:)
