A very simple cookie recipe
Here’s a great cookie recipe that I’m just after inventing, well I’m not sure if inventing is the right word.. But I wanted to fid an easy way to make both brownie and blondie cookies using the same cookie dough base. And wondered if my brownie recipe would work as a base and turns out it did! I just had to change a few things. Please check out the full recipe below, this is definitely something your kids could do.
Here’s what you need to make 12 cookies (6 brownie and 6 blondie)
120 g butter
200 g caster sugar
25 grams demerara sugar
1 egg
1 tsp pure vanilla extract
A pinch of sea salt
135 g plain flour
15 g cocoa powder
40-50 grams of dark chocolate
40-50 grams of white chocolate
Melt the butter on medium heat until caramelised (when the butter turns light brown and smells a little nutty). Remove from heat and whisk in the sugar using a hand whisk. Then add the egg and vanilla extract. Whisk until well combined.
Now add half the batter to a bowl and keep the rest in the saucepan.
Add 60 g of flour, cocoa powder, dark chocolate and a little pinch of salt to the batter in the bowl. Mix using a rubber spatula. Place in the fridge.
Add the rest of the flour, white chocolate and pinch of salt to the saucepan. Mix using a rubber spatula then place in the fridge.
After about 15 min the dough should be cool enough.
Turn the oven on 190 degrees or 170 fan.
Start with the blondie dough, divide into 6 equal pieces and roll into balls. Place them spaced out on a baking try lined with baking parchment and flatten them a little with your hand.
Do the same with the chocolate dough.
Bake for about 12 minutes. This will depend on your oven.
Leave to cool on the baking tray. Once cooled you can decorate with some melted and chocolate and sprinkles if you wish. But there’s no need, they will taste just as delicious without.
