Muffin pancaks
Whenever I want to make a quick lunch or an after school snack for the kids, I make muffin pancakes. You just add pancake batter to a muffin/cupcake tray and then bake in the oven. Super easy and super quick.
Here’s how you make them:
So for one cupcake tray you need:
120g/ 200ml of plain flour
A pinch of salt and sugar
2 eggs
400 ml milk
1 small grated apple (optional)
Butter for the cupcake dish
Heat the oven to 200 degrees. Put some butter in each of the cupcake “holes”.
Mix together flour, salt and sugar with half the milk until smooth. Then add the rest of the milk and the eggs and mix together. Finally add the grated apple if using.
When oven is hot, place the cupcake tray in the oven so the butter can melt, this will only take 1 minute.
Pour the batter into the hot tray, you should fill around 3/4 of each cupcake case. Then bake in the middle of the oven for about 20 min, this will depend on your oven. Just keep a close eye towards the end so it doesn’t burn😊
I think the best toppings for muffin pancakes are cream or yoghurt, blueberry jam and sliced banana.
