Simple Valentine’s brownie cake
Want to surprise your loved ones with something yummy (yet really simple) for Valentine’s this year? This brownie cake is very quick to make and the best thing is that you mix everything in the saucepan, so minimal washing up needed!
Here’s what you need:
120 g butter
200 g sugar
2 eggs
60 g plain flour
30 g cocoa powder
1 tsp pure vanilla extract
A pinch of sea salt
A handful of mini marshmallows (optional)
Method:
Turn the oven on 170 degrees.
Line a 8” cake tin with baking parchment.
Melt the butter on medium heat. Keep melting until caramelised, when it has a light brown colour. Remove from heat. Leave to cool slightly.
Stir in the sugar and egg using a hand whisk (not electric). Add the flour, cocoa, vanilla and salt. Keep stirring until well combined.
Fold in the marshmallows using a spatula.
Pour the mixture into the cake tin and bake for 20-25 min. Keep checking the cake because you want to make sure it’s still moist when you take it out of the oven.
Slice the strawberries and place them on top of the cake, preferably in a heart shape.
Share it with your loved ones
If you want to make an even more deluxe version, you can pipe some cream in a shape of a heart on top of the cake and place the strawberries inside. I’ll be making lots of of these brownie cakes this week for my lovely costumers:)
